Micro Lot: Colombia: Rafael Amaya Extended Fermentation - Light / Filter Roast

This very special micro lot was produced at Rafael Amaya's farm Finca La Virginia, located in the Timiná region of Huila in the southern part of Colombia. He is famous for his work in developing extended fermentation and for achieving amazing flavours not usually found with traditional washed or natural process.

With the help of his son, this microlot was exposed to a long dry anaerobic fermentation period of 50 hours with the pulp on. This fermentation takes place inside the bags that the pickers use to collect the coffee, which is kept on the coldest part of Rafael's farm where the temperature never exceeds 15°C. The coffee is then pulped and fermented for a further 50 hours. This second fermentation takes place below 16°C inside ceramic tanks, and the coffee mass is not agitated at all. Afterwards, it is placed on raised beds and dried until the ideal moisture content is reached.

Rafael is also known for his work with different varietals of coffee. This particular micro lot is 100% Pink Bourbon. This very extremely rare varietal is cultivated from hybridizations of Red and Yellow Bourbon. Pink Bourbon is very difficult to grown in any commercial volume, but is said to have a higher resistance to leaf rust disease.

Rafael has been growing coffee for 20 years but has only been in specialty coffee since 2015. He enrolled for training 2014 trying to learn more about specialty coffee in order to produce high quality lots. Rafael followed his teacher’s advice and started to ferment his coffees for 40 hours - normally growers in Colombia ferment coffee for about 14-16 hours. After trying his 40 hour fermented coffee he continued until he achieved an extremely fruity and complex cup. These days he ferments between 100-180 hours and the way he determines when to stop is by trying the mucilage at various stages during fermentation. He says “when the mucilage tastes like over ripe orange it’s just the time to stop, this usually happens 20 hours after it tastes like passionfruit.”

This microlot from Rafael Amaya is bright and clean, with notes of jasmine, pineapple and peach.
