Finca La Casita is owned and operated by Mr. Fabio Claros, a 77 year old man with a lifetime of experience. More than 40 years ago he began to plant in his Finca La Casita, and named it that way because in the middle of the plot there has always been a small house of bahareque (one built with sticks interwoven and covered with mud).

In 2010, he became a member of the COMSA Co Op. For him, it represented a challenge because all his life he had worked with chemical products, but he gradually made the transition to organic production and sustainable practices that improve the environment.

in 2012 After having suffered damages in his farm due to leaf rust, he replaced trees, and in his first new harvest began to work on improvements to his coffee processing. From start to finish he meticulously oversees the process from picking to the mill. He is aware that it is useless to have a good plot of land with good production if he loses coffee quality through poor processing.

Don Fabio has developed natural coffee processing methods. He also prepares bokachi and biofertilisers for his farm. Every morning he walks through the whole plot to observe how his coffee plants are looking and to check if they need any help, maintaining a direct and personal relationship with his plantation.

"The organic process is an investment, the plants are not in decay, the soil is happy and does not pollute the environment." "Now my farm is running well and I have managed to diversify it with birds, swine, fish, vegetables and fruit trees," says Fabio.

His first new crop harvest was in 2016 which saw a dramatic increase in quality, and again this year with his second harvest he has seen even better quality coffee which we are proud to offer to you today.

Side note, In January, Michael Prem won the 2017 Austrian Barista Championship, using the coffee of Fabio Claros in his presentation.

Finca La Casita is super enjoyable to drink, lots of natural aroma, yet suprisingly clean in flavour, lots of juicy stone fruit flavours with a caramel sweetness and a lingering finish. Great as a medium black!
