Costa Rica: Hacienda San Ignacio (Starmaya) Red Honey - Medium / Espresso Roast

Intl. Price

Hacienda San Ignacio is located in Orosi Valley, Palmichal, Acosta in Costa Rica. It ́s a rural community, where the coffee growing tradition goes back over 100 years, and is the main commercial activity. The fertile lands of the Orosi Valley and its magnificent climate are ideal for coffee growing.

For over 5 years Hacienda San Ignacio has been part of the forest protection program of FONAFIFO-MINAE in partnership with the ECOM who is committed to protecting more than 156 hectares of forests.

ECOM's aim when working with farms like Hacienda San Ignacio is also to aid in increasing production quality and volume, while reducing the cost of operation. Their programs help the families to cover the cost basic needs, school investments, as well as farm and house maintenance and repairs.

In recent years the coffee industry in Central America has been heavily affected by the coffee leaf rust disease, with many areas losing up to 90% of their harvests.

The Starmaya F1 Varietal was developed by cross breeding the varietals: Marsallesa and wild Ethiopian/Sudanese together at the La Cumplida farm farm in Nicaragua, creating a plant which is both coffee leaf rust resistant, and yields well at the medium elevations found in places like Costa Rica and Nicaragua.

To date Starmaya is the only F1 hybrid in the world propagated by seed, rather than through costly biotechnology. Before Starmaya, the only way to efficiently reproduce F1 hybrids for farmers has been through cloning, or manual pollination of the mother and father plants, both of which methods are costly and have limited capacity. Having a disease resistant varietal which can be grown from seed that also yields well while still producing quality coffee is a game changer for the issues that the Costa Rican coffee industry is facing.el.

If you're feeling nerdy, feel free to click here to read more about the development of Starmaya.

As a medium roast, Hacienda San Ignacio is still bright and clean but with more toasty undertones, with notes like marmalade, and almond, with a red apple sweetness.
